Hi there,

I think this is the polarity of the microphone. Assuming the case is GND, then you can see the "-" leg has traces to the case.

I would connect it in reverse !
The case is connected to the ground - the bright green lines indicate the ground connections between the pad and the edge casing.

So while I am ordering the pots from Digi-key I would like to order the connectors so I can have connectors on both the "use pot" and "straight" locations.

Could you list the digi-key part no for the outboard connectors?

Also any particular recommendation from the 50 or so pots listed would be nice.

Regarding the pots, perhaps a 100k Ohm pot would work nicely, ganged (2 in the one package). I would try to select the ones with metal shafts if available and try to find plastic knobs because sometimes touching the metal gives noise.

Regarding the plastic connectors ... they are called jst xh.
Here are example male headers :

For the cable, you can also probably get that from digikey, or perhaps ebay. I did a search for jst xh 3 pin :
