Stereo soundcard suitable for data collection?

I am using an Arduino Zero to collect data from two channels and Raspberry Pi 3 as data server. The signals are basically low frequency audio and audio line level. As the Arduino Zero is discontinued I am looking to this soundcard so the RPi can receive the data directly. I program in C and am proficient.
I need to collect samples from both channels for about 3 seconds and repeat that periodically.
Does this sound like something the stereo sound card can handle?
